FOOD SERVICE ADMINISTRATOR

Job Summary
Responsible for all aspects of the operational integrity of the Food Service department at TROSA. Primary duties of office work include, but are not limited to, quality control, policies and procedures, compliance, efficiencies, and effectiveness of the department, as well as, the safety and health of the food service operations.
Duties and Responsibilities
• Create/update and ensure adherence to Food Service and TROSA policies and procedures.
• Oversee quality improvement of menu, food service, catering, and inventory management.
• Identify opportunities to increase efficiency and effectiveness of Food Service department.
• Develop and oversee training curriculum, including ServSafe and safety training. Maintain attendance records.
• Manage budget and expenditures. Set monthly spending limits for food and supplies.
• Work with Inkind Manager on product donations that can offset spending budget for food, beverages, and supplies.
• Analyze spending for appropriateness, as well as cost-saving or quality opportunities. Negotiate bulk purchases.
• Make or recommend purchases that require corporate credit.
• Ensure compliance with government/partner requirements: USDA, VA, FNS/SNAP, Health Department, NCHFA, Feed The Children, Good360, donors, etc.
• Ensure compliance with TROSA’s Emergency Preparedness & Response manual.
• Prepare for annual inventory test counts by TROSA’s auditing firm in June.
• Manage vendor relationships and agreements.
• Manage service contracts.
• Collaborate with staff on large scale events involving food service.
• Serve as point person for construction and renovation projects.
• Prepare SITs for entry-level staff responsibilities.
• Develop the skills, knowledge, and ability of entry-level staff members to take over administrative duties of the department.
• Other duties as assigned.

Knowledge, Skills, and Abilities
• Knowledge of food and catering services
• Ability to develop standard operating procedures and training manuals
• Comfortable working within budgets
• Skilled using computers to document procedures, analyze data, and create communication tools, checklists, etc.
• Ability to correctly estimate cost/profit for outside catering jobs
• Excellent communication skills for use with TROSA staff and residents as well as outside catering clients
• Detail-oriented with proven organizational and multitasking skills
• Ability to set priorities, follow up, and meet deadlines
• High standard of professionalism, personal values and integrity
• Maintain ServSafe certification

Credentials or Experience
• High school or equivalent
• Experience in food service serving large populations
Special Requirements
• The usual work schedule is Monday through Friday during daytime business hours.
• Willing to work evenings/weekends as the job
