Food Security
Food security is a measure of the availability of food and individuals' ability to access it. Affordability is
only one factor. There is evidence of food security being a concern many thousands of years ago, with
central authorities in ancient China and ancient Egypt being known to release food from storage in times
of famine. At the 1974 World Food Conference the term "food security" was defined with an emphasis
on supply.

Food Safety
Food safety involves the safe handling of food from the time it is grown, packaged, distributed, and
prepared to prevent foodborne illnesses. Food safety is the responsibility of those who handle and
prepare food commercially for delivery to consumers and of consumers who prepare and eat food in their
homes

Food Sustainability
Sustainability in Food Service is simply defined as ‘a way of producing and consuming food that ultimately
promotes the continuous well-being of ourselves and our planet’.

VacCorps is a nonprofit organization that mobilizes volunteer vaccination support staff to help control the COVID-19 pandemic in NC. We connect non-traditional vaccinators, health science and laboratory personnel, and other volunteer support staff to vaccination providers and centers. By mobilizing volunteers as support staff, vaccination providers can increase capacity without further taxing the healthcare providers who are caring for COVID-19 patients. Critically, our platform connects volunteers across NC counties to help underserved communities gain access to vaccination support staff. Access to VacCorps volunteers is free of cost and available to governmental and nongovernmental providers.
